Valentine's Day Lunch Idea #2

This lunch creation is a little bit different. It doesn't contain your typical cream cheese, peanut butter, ham/cheese sandwich filling. So what's in it you wonder? Dun, dun, dun....liver sausage.


Now, if you've never had it before, just the name is enough to make some people cringe. I actually tell my kids it's called "special butter" because if I called it by name, they probably wouldn't eat it either.

Growing up with a Slovenian background, this was a staple of my childhood and I still love it today. It's great on bread, crackers, and croissants. And what's even better, it's pink! (Perfect for Valentine's)!

So let's get right to it and start with the sandwich. If I'm being honest, this didn't quite turn out as expected. I bought rye bread because I thought the shape would be perfect if I cut it diagonally and then flipped one side to make it into a heart shape. I was very mistaken. So, what I ended up doing was making 2 sandwiches and using the same half from each to make the hearts. One for the kids, one for you!? (Maybe it wasn't a mistake after all).

For this lunch I used:


  • 4 pieces of bread
  • Fine liver sausage
  • Raspberries
  • White chocolate chips
  • Cucumber
  • Small heart shaped cookie cutter

To start, spread the liver sausage in between 2 slices of bread and then another 2 slices. Cut each sandwich diagonally and then take the 2 same sandwich sides and flip one and put it with the match.


Do the same for the other pieces. (I actually ended up trimming the second sandwich into a heart shape as well).


Next, take your cucumber and slice it horizontally into thin slices.


Once that's done, take your small heart cookie cutter and cut the middle out with it. Now you have cute little heart shaped cucumbers.


A suggestion here (because I hate food waste) is to use the scraps of the cucumbers for a salad.


Finally, take your white chocolate chips and put 1 into each raspberry.


I also added some snacks for them to enjoy. A couple of heart candies in with their sandwich, a cheese string, yogurt tube, and a mix of pretzel sticks, pink Froot Loops and valentine's gummy bears.
