Healthy Breakfast "Cereal"

Let's talk cereal. There are so many different options out there, most of which are full of sugar. My kids obviously love it. And I'm not going to lie, give me a box of Froot Loops, Lucky Charms or Pumpkin Spice Mini Wheats and I'll eat half the box in one sitting. Not necessarily the best when you're trying to be healthy.

During my Whole30, I wanted to switch up my usual eggs for breakfast and I needed to find something else that was compliant. I'm not a huge fan of regular cereals for breakfast because I personally don't find them very filling (unless I eat half the box as mentioned above). I needed to think of something that was both filling and Whole30 compliant and I think I have done that. Bonus, it's pretty quick to make.

What you need is:

  • 6 dates (pitted)
  • 20g chopped walnuts
  • 15g coconut (smiles is what I used for extra crunch)
  • an apple
  • half a banana
  • 1 cup almond milk

Chop the dates, apple, and banana up into bite size pieces.

Put all of the dry ingredients into your bowl.

Add almond milk.

And voilĂ , breakfast is ready!

You really could omit or add any fruit, nuts or seeds that you want. I didn't have a banana or walnuts one day so I used chia seeds and pecans instead and it tasted great as well.

This breakfast had flavor, crunch, and was filling. What it didn't have was refined sugar, grains or dairy. This breakfast would also be good for a Paleo, Gluten-Free and Dairy-Free diet. Try it out and let me know what you think!
